Somerset Cider Vinegar cucumber

Traditional Southern cucumber salad
with cider vinegar

In America’s Deep South, cooling cucumber salads with cider vinegar are served daily.

With the current glut of cucumbers in greenhouses and gardens throughout the Country why not try this traditional Southern recipe?

In the Southern States, cucumber salad is kept in the fridge for a few days so that they are gently pickled.

Ingredients

2 cucumbers, peeled and sliced
Salt
3 teaspoons sugar
1/2 cup apple cider vinegar
2 spring onions, green only, chopped
2 teaspoons sesame seeds

Method

It is common to score the skins of the cucumbers with a fork to leave grooves. Fruits are then sliced, salted and left for half an hour. Slice the cucumber and rinse and pat dry on kitchen towel. Dress with sugar and apple cider vinegar and sprinkle on green onion and sesame seeds.
