Somerset Cider Vinegar sauce for pork loin

British pork loin is a fantastic product and deserves the very best sauce. Try this one using cider vinegar and jam.

Buy your pork from the local farmer’s market or farm shop and slow roast to your taste.

The sauce is made from a mixture of one cup of real cider, one tablespoon of Somerset Cider Vinegar and one tablespoon port (or apple brandy).

Mix the ingredients in a small pan on a low heat and bring to a simmer. Add one cup of preserves (I think plums or apricots work best) and some chopped fresh thyme.

Stir the mixture constantly until it thickens and reduces by half. Add a little sugar if required.
